This excellent salad is made from a tiny variety of Black Eyed Peas popular in Brazil. Good for buffet service and picnics as it will not wilt.

Bell Pepper, yellow
Tomatoes
Scallions
Cilantro

Make   -   (10 hr - 10 min work   -   See also Comments)
  1. Soak BUTTER BEANS overnight or 8 hours with 1/2 T Salt and plenty of water to cover.
  2. Drain and rinse Beans. Place in a sauce pan with water to cover, bring to a boil and simmer until Beans are tender but still intact. Drain and cool well.
Make   -   (45 min)
  1. Dice ONION small. Cap and core BELL PEPPER, dice about 1/4 inch. Dice TOMATOES about 1/2 inch. Split thick white ends of SCALLIONS and slice thin, white and green. Mix all in a large mixing bowl.
  2. Chop CILANTRO and PARSLEY small. Measures are after chopping, moderately packed.
  3. Mix all Salad items and tumble the salad to mix evenly.
  4. Mix together all Dressing items in a small jar. Shake the jar vigorously and pour the dressing over the Salad. Tumble well to coat.
  5. If possible, refrigerate for at least 2 hours to blend flavors.
NOTES:
  1. Butter Beans:

      [Feijão Manteiguinha (Brazil); Frijoles Mantequilla (Mexico); Vigna unguiculata]   This tiny variety of Black Eyed Pea is grown in Pará state of Brazil, in Mexico, and in the American Southeast. It is available on-line imported from Brazil (2024). For details see our Cowpeas page. Of course, this salad can be made with other varieties of Black Eyed Peas, with some difference in flavor and texture.
  2. Comments:

      It is reported that in Brazil they don't pre-soak the beans. I found unsoaked beans simmered 3 hours still didn't seem buttery. The soaked took half the time with better results. For tender beans the Salt in the soaking water is important. On the other hand, in Brazil they would most likely be cooked in a pressure cooker, so their results may differ. Beans are so important in Brazil, nearly every household has a pressure cooker to cut down cooking time.
